The heavenly dessert that doesn’t have to be a guilty pleasure
Ever heard of tapioca? If you haven’t tried it yet, the best way to start is with this vegan Tapioca Pudding. You will fall in love at first spoon.
This is a vegan, gluten-free dessert that no one will frown upon because it’s simply too delicious. No one will even care what its made with, you can hold the info for a big reveal after your guests or family have praised it enough.
And while we’re not vegan or exclusively gluten-free, we were seriously excited to find a dessert that doesn’t feel like you’re compromising just to eat healthier. This is a quick dessert recipe that is delicious and just happens to be super healthy too.
You can choose something like stevia, honey or maple syrup to sweeten it and you have yourself a vegan, 100% organic treat.

Vegan Tapioca Pudding Ingredients
Vegan Milk
We used almond milk, but you can pick your favorite.
Tapioca Balls
Tapioca balls are obviously the stars in this simple quick pudding. They are made from the starch from cassava root, better known as the bobba balls in Bubble tea. You should be able to find them at your local organic food shop, in both small and big size. We used the small ones for this recipe.
Coconut Milk
DThe diary version of tapioca pudding is made with cow milk and eggs. The coconut milk is a great substitute for adding the smootheness of the classical recipe and an extra dose of flavor.
Vanila Bean
If you can, we strongly recommend that you use the actual bean and not vanilla essence. It makes all the difference.
Maple Syrup
Two big spoons should be enough but add to taste
Honey
We found that mixing in a bit of honey with the maple syrup gave it the perfect sweetness
Cinnamon
Add half a spoon for more flavor. If you make this in winter it’s perfect for giving it that festive mood
Bit of salt, to emphasize the sweetness.
How to make tapioca pudding
Step 1
Soak tapioca balls in your milk of choice for 1 hour.
Step 2
Dry the tapioca and move them to a pot, adding coconut milk
Step 3
Bring to a simmer on medium-high heat then continue to cook on low heat for about 25 minutes, or until balls become transparent. Stir occasionally so that they don’t stick.
Step 4
Pour your pudding

Add the wow factor. You can leave your imagination do the work here. Use fruits, shave chocolate, ganache, jam, chocolate chips. Anything that works with pudding, works with this.

INGREDIENTS
- one cup almond milk for soaking the tapioca
- 2 cups coconut milk
- 2/3 cups tapioca balls
- 2 spoons maple syrup
- 2 spoons honey
- 1/2 teaspoon cinnamon
- one vanilla bean
- pinch of salt
1. Soak the tapioca balls in almond milk for about an hour
2. Dry them by placing in a sieve then put in pot and add coconut milk, maple syrup, cinnamon, the vanilla bean and a pinch of salt
3. Cook on medium high heat until they simmer. Reduce heat to low and cook for 25 minutes or until tapioca balls become transparent. Stir occasionaly.
4. Pour in coups and leave over night. If you make this in winter, you can also eat it warm with some jam
