Omelette Rice with Vegetables

You might have heard of Omurice, a japanese dish, so if you think this Omelette Rice with Vegetables is inspired by that, you’re right. But we can’t help it, we love omurice so much that we keep coming up with different versions. Of course, the original is absolutely delicious too.

Basically, Omelette Rice puts a little twist on your classic omelet turning it into a perfect lunch, with extra benefits:
-you only need one pan;
-it’s super quick to make;
-works great as a side dish to pretty much anything;
-it’s healthy;
-it’s compliant with a vegetarian diet;
-it’s really cheap to make.

We actually started cooking this recipe back in university, where we studied Japanese. We didn’t really have access to the original dish recipe, so we reimagined it with what we had available. And we fell in love. We basically ate this version of Omelette Rice with Vegetables daily for years, and we’re still not tired of it.

Since we could make it back when we were students, we’re really confident that pretty much anyone can cook this. You don’t need to be an expert or even really good in the kitchen. You only need fresh eggs, good rice and about 30 minutes to get a nice, healthy, rich one pan lunch. And once you start making it you’ll love how easy it is to experiment with it. You can add different types of meat, extra cheese, other vegetables and play around with your seasoning.

As always we recommend fresh, free-range eggs. 

Bell Pepper

For extra color in your dish go with red and green, or even yellow bell peppers


Who doesn’t want to be as strong as Popeye? We always sneak in some spinach in our dishes when we can get away with it.


We have great news, you can make this dish with any type of rice you prefer: wild, brown, sushi rice, they all work.


For creaminess, we recommend something like feta cheese.


Just a spoon of milk, to enrich the omelet.

How to make Omelette Rice with Vegetables

Step 1

In a non-stick pan, add one cup of rice, two cups of water and salt. Cover with cap until rice is cooked. If you own one, you can also use a rice cooker for this step.

Step 2

Whisk 3 eggs with salt and pepper and 2 tbs milk. 

Step 3

Add grated cheese of your choice. ( you can mix feta and yellow cheese)

Pour over your cooked rice along with chopped belle pepper and your spinach, cook for another 3-5 minutes on medium heat, until the egg is cooked. C

Omelette Rice with Vegetables

  • 3 eggs
  • 1 cup rice
  • 2 bell peppers
  • 1/4 cup spinach
  • 1/2 cup grated cheese of choice
  • 2 tbs milk
  • seasoning

1. Boil rice with salt and pepper.

2. Whisk eggs with pepper and 2 tbs of milk

3. Add cheese of choice to eggs.

4. Dice bell peppers

5. When rice is cooked, add eggs and cook for 3-4 minutes on medium heat. Add bell peppers and spinach and cook for a few more minutes until spinach has softened.
