Omelette Muffins Ingredients
Vegetal oil of your choice
You can use first press sunflower oil, olive oil or anything else but be mindful not to go for something with a strong taste.
We’re always careful to use only free range eggs. The taste is simply amazing, and you get too feel good about making ethical choices.
If you don’t have fresh spinach, you can use frozen.
Depending on the season go with either cherry tomatoes or the normal variety.
Or scallions if you prefer. Finely chopped.

This really depends on your taste. You can use any type of cheese you like, cheddar, brie, parmesan or any combination. .

How to make Omelette Muffins
Preheat the oven to 365 F and oil your muffin pan
Whisk eggs with seasoning of your choice. We went for salt and peper
Add the chopped vegetables and shredded cheese. Feel free to get creative, you can add brocolli or zucchini to the mix if you like.
Bake for 20-25 minutes
Serve with salad and a big glass of orange juice.
A fancy twist to the traditional omelette

- 9 free range eggs
- 1.5 oz fresh or frozen baby spinach
- 1.5 oz diced tomatoes
- 1.5 oz diced onion or scallions
- 1.5 oz diced bell pepper
- 3.5 oz cheese of choice
1. Preheat oven at 365 F and oil the muffin pan.
2. Whisk eggs with seasoning
3. Add vegetables and cheese
4. Pour in muffin tin and bake for 20-25 minutes
