We love lazy breakfasts. And while we’re the first ones to advise to take every chance to spoil yourself first thing in the morning, we admit we’re not always the first to get cooking fancy stuff before we’ve even had our coffee. These Omelette Burgers are the absolute perfect compromise: fancy looking, delicious and so easy to make, you could probably make them in your sleep.
- Servings: 2
- Preparation time: 10 minutes
- bun (whatever you prefer, we used whole wheat cereal buns)
- 3 eggs
- 50 g yellow cheese
- 100 g ham
- 1 cucumber
- salad or red cabbage
- Beat eggs, mix in ham and cheese. Spice to taste.
- Cook scrambled eggs in a bit of oil, just enough for it not to stick
- Build your burger of choice adding the omelette, sliced cucumbers, salad and ketchup
That’s it, three simple steps and you got yourself a healthy breakfast idea that’s perfect both for busy weekdays and lazy weekends.
Admittedly, you might get ketchup all over your face eating this ( ok, you must definitely will), but they are just so delicious it’s worth it. They will keep you going until lunch and the burst of energy will kick start your day just right. As a bonus, the proteins in the eggs make this a really satisfying meal, you won’t have to worry about getting hungry again mid morning.
If you want to make this vegetarian, just remove the ham from the omelette and replace it with scallions or anything else you can think of putting in an omelette. Actually, that’s the best part about this recipe, you can just replace anything you’d like ( other than the bun and omelette of course, or it wouldn’t be called omelette burger).
