This dessert has centuries of tradition backing it up and by consequences, has attained a near perfect balance of taste and texture.

We’ve been in love with macarons for a while now, but never dared try. The myth about the complexity and difficulty of this dessert kept us away until we finally decided to take them head on. And surprise, if you follow some basic rules, these are actually only moderately difficult.Best part? They’re ready in under an hour, including the 30 minutes you let them rest.

Since the first batch we baked, we’ve been making macaron like crazy, so be sure to keep an eye out for more varations of the recipe.

Powdered Sugar

This is one of the main ingredients so try to use a good brand and make sure it’s not moist. /p>

Almond flour

You can buy almond flour or you can make your own in the food processor by granding almonds

Egg whites

Another star ingredient of macaron, the egg whites make all the difference, so use fresh, free range eggs. Make sure your eggs are room temperature before you start

Sugar

Yes, there is even more sugar in the recipe. Sweets lovers, rejoice.

How to make Macaron

Step 1

Mix powdered sugar with almond meal and make sure there are no lumps. Just to be safe, pass the mixture through a fine mesh sieve.

Step 2

Whisk the egg whites with sugar until they form stiff peaks.

Step 3

Gently mix in the powder sugar and almond meal/flour. Don’t use the mixer for this step. Optionally add a few drops of organic food coloring.

Step 4

Fill a pastry bag with mixture and gently pipe round shapes onto your tray lined with cooking paper. It’s your choice how big you want to make them, but try to keep the size consistant.

Step 5

Let them rest for 20-30 minutes.

Step 6

Bake for 15 minutes. When they’ve cooled, finish them with filling of your chose ( we went with chocolate ganache).

INGREDIENTS

  • 3.5 oz powdered sugar
  • 3.5 oz almond meal/flour
  • 2 eggs
  • 20 oz sugar
  • bit of salt

1. Mix powdered sugar with almond meal

2. Whisk egg whites and caster sugar until stiff peaks form

3. Gently fold powder sugar/almond mix into egg whites

4. Pipe mixture unto cooking tray

5. Let rest for 30 minutes

6. Bake at 325 for 12-15 minutes.

6. Let cool and add filling of your choice
