So these Chia seeds are the newest craze in terms of superfoods. We wouldn’t exactly consider ourselves healthy eating ambassadors but we do like to throw in foods that pack a nutritional punch in our recipes – mix the good with the fun, or in this case, the healthy with the delicious. So we gave this Chia Coconut Pudding a try and let me tell you, it’s not half bad. That in turn means it’s only half good but that’s a lot for a super healthy sweet treat.
So without further ado, this is the simple recipe for a different kind of pudding. This might be a bit of an aquired taste, and might not be an instant hit among all your friends or it might be love at first spoon, it all depends on your taste buds.

- Preparation Time: 5 minutes
- Waiting Time: 5 hours
- 4 tbs chia seeds
- 2 cups coconut milk ( not cream)
- 1 tbs honey or maple syrup
- 10 ml vanilla essence
- 1 tbs coconut flakes
Instructions chia coconut pudding
- Add the chia seeds to coconut milk and stir for about 5 minutes
- Add the chia seeds with milk to a blender along with all the other ingredients. Blend for one minute.
- Pour in cups, refrigirate for 5 hours or overnight.
- Garnish with coconut flakes and fresh fruit.
All in all this was an interesting dessert to make and try but I am not sure we would try it again. If we were to change something I’d probably add a bit more sweetener, but that’s just my sweet tooth talking. It is quite refershing though and rather than a dessert we would wholeheartedly recommend it for a quick healthy breakfast recipe. By quick I mean the prep time, you can make it ahead and leave it in the fridge over night, quite like overnight oats. All in all this might not be the best tasting pudding we ever made, but it sure packs a nutritious punch.
